ROOT VEGETABLE BURGER BAKE
Makes 2 servings
 

2 ‘Quick ’N Eat’ 3-ounce burger patties
1 large carrot, peeled and cut into
1-inch pieces about
12 stalks asparagus
1 small sweet potato, peeled and cut into
1/4-inch thick half moons
1/2 small red onion, peeled and cut into wedges
1 lemon, sliced
1 head garlic, top cut off
4 small sweet peppers
4 green onions, sliced
2 tablespoons chopped fresh oregano (or 1 teaspoon dried crushed oregano)
3 tablespoons olive oil
2 teaspoons garlic salt
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon coriander, cardamom, or cumin

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Place all ingredients onto a large baking sheet with sides. Stir to evenly coat all ingredients with oil and spices.
  3. Bake for 25 minutes or until all items are tender and cooked through.
