Keto Chili
Serving Size: 6

2 tablespoons olive oil
2 onions, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 jalapeños, minced
4 cloves garlic, minced
1 (18 ounce) bag Quick n’ Eat Angus Beef Patties, chopped or crumbled
2 tablespoons ancho chili powder
2 teaspoons cumin
1 teaspoon oregano
1 (6 ounce) can tomato paste
1 (28 ounce) can diced tomatoes
4 cups beef broth
Kosher salt
sour cream
shredded cheddar cheese

  1. Heat oil in a large heavy-bottom pot over medium heat. Add onions, peppers, and jalapeños, and season with Kosher salt. Cook, stirring occasionally, until vegetables are softened, about 5-6 minutes. Add garlic and cook for 1 minute, stirring frequently. Stir in burger patties and spices and let cook for 1 minute.
  2. Add tomato paste, canned diced tomatoes with juice, and beef stock. Stir and season with Kosher salt, and bring to a boil. Turn down heat to maintain a simmer and let cook for at least 30 minutes, preferably 1 hour to allow flavors to meld. Serve with sour cream and shredded cheddar cheese.
